By Domenico Cannillo, bar manager of cocktail bar S-Club, Fregene (Roma)
For the cocktail:
• 25 ml Elixir Veneziano, Negroni Antica Distilleria
• 10 ml Coffee Liqueur, Negroni Antica Distilleria
• 40ml Gosling black seal dark rum
• 1 Sugar cube
• 5 Drops Jamaican jerk bitter, The bitter ends
Method:
From the barrel Old fashioned style
Glassware:
Old fashioned vintage glass
Garnish:
Dried lime and orange
Procedure:
Pre-mix the drink inside a small French oak barrel previously impregnated with Pimiento Dram, for an additional spicy note. Build the cocktail like an old-fashioned classic that is poured straight from the barrel. Decorate with dehydrated lime and orange.
An old-fashioned drink with many spicy notes reminiscent of the Caribbean, starting with a syrupy dark rum loaded with vanilla notes, a very spicy bitter that recalls a traditional Jamaican preparation, the pimiento or “allspice”, rich in warm, intense aromas; the excellent structure of this drink is beautifully supported by the aromatic fullness of Elixir Veneziano, Negroni Antica Distilleria, 26% abv, a liqueur created with typical Venetian products: Raboso Piave wine with organic black cherry and plum juice, an infusion of Treviso Red Radicchio and a small percentage of Grappa. A sweet, long and enveloping finish brings out the notes of Coffee Liqueur, Negroni Antica Distilleria, 25% abv, made with the finest blends of Arabica beans, with intriguing toasted notes and hints of custard and caramel.
